April Recipe Makeover: Healthier Version for Easter Ham, Pecan Wild Rice, and Gluten Free Hot Cross Buns

Easter Meal Makeover

April is usually time to celebrate with family, friends, and relatives with the tradition Easter Breakfast of Hot Cross Buns and the Easter Ham brunch or dinner.  In honor of National Cancer Control Month, why not try a healthier version with no chemicals and very little fat!  Generally ham is highly processed and cured with high salt and nitrates, so, be sure if you can’t find a chemical free one at your favorite grocery store, trim the fat and eat in moderation!

Ham

Lean ham provides:

  • Protein – building blocks of bone, muscle, blood, hormones, enzymes, energy
  • Iron – helps carry oxygen in the blood
  • B Vitamins – help form RBC, build tissue, and release the energy to fuel the body
  • Zinc – helps the immune system
  • Potassium – helps muscle and nerve function
  • Magnesium – helps build bones and releases energy from muscle
  • Vitamin E – antioxidant

Makeover Ham Options:

However, you can find low sodium, gluten-free, nitrate free ham at most Whole Foods Markets and local organic grocery stores.   Some of the brands you’ll find are: Applegate Farms, Berkshire Ham, Wellshire, and Whole Foods.

Makeover Ham Glaze Options:

Typical ham glazes call for brown sugar, honey, or fruit preserves.   Swap out the brown sugar or honey with agave or raw honey. Swap out the fruit preserves with organic unsweetened fruit juice (apple, orange, pineapple, or cherry).

Ingredients: 8-10 lbs. ham (fully cooked), 10-20 whole cloves, 2 cups water to create steam.

Glaze Ingredients: ½ cup raw honey or agave, ¼ cup mustard, 2 Tbls apple cider vinegar, 1 cup of organic unsweetened apple, orange, or pineapple juice

Directions:  Preheat the oven to 325 degrees F.  Using a knife, score the skin of the ham, about ½ inch deep to make a grid-like pattern.  Place the ham with fatty side up in a large roasting pan.  Add the water to the bottom of the roasting pan.  Insert 1 clove where the grid lines cross on the ham.  Bake for 1 hour, basting with the pan liquid.  In a small saucepan, heat glaze ingredients.  Using a pastry brush, cover the grid pattern with glaze.  Continue cooking and basting every 15-20 minutes until the meat thermometer is 165 degrees F (approximately 2 – 2 ½ hours).  Remove from the oven and let it rest for 15 minutes before carving.  Serve with pecan and green bean rice.

Makeover Pecan and Green Bean Wild Rice:

Use whole grain brown rice, wild rice, or a brown and wild rice mix.  Swap out the pecans for almonds.

Whole Grains Provide:

  • Fiber – help maintain weight (keep you feeling full), digestion, waste elimination
  • B Vitamins – help form RBC, build tissue, maintain healthy nervous system, and release the energy to fuel the body
  • Iron – helps carry oxygen in the blood
  • Magnesium – helps build bones and releases energy from muscle
  • Selenium – antioxidant, helps protect from cell damage (oxidation/free radical formation)

Ingredients: 1 cup of wild rice, 4 cups of water or chicken broth, ¼ cup raw slivered almonds, ½ cup cooked French cut green beans, 1 tsp. sea salt, ½ tsp. pepper, 1 Tbls olive oil

Directions:  Add olive oil, almonds, and wild rice to a rice pan or large sauté pan.  Lightly toast the almonds and wild rice.  Add in the ½ the water (or chicken broth), sea salt, and pepper.  Bring to a boil.  Reduce to simmer and stir every 10-15 minutes with a fork.  After about 30-45 minutes, check to see if the rice is tender or if liquid has been absorbed.  Add more water if rice needs more cooking time.  When rice is cooked, remove from heat, add in the green beans, fluff the rice, and cover for 10 minutes.

Easter Breakfast Makeover:  Gluten Free Hot Cross Buns

Traditional Easter hot cross buns can be made with whole-wheat pastry flour or gluten-free.  The powdered sugar glaze and be swapped out for stevia.

Ingredients: 3 cups almond flour, ½ tsp. baking soda, pinch of sea salt, ¼ cup macadamia nut oil, 2 Tbls raw honey, 2 tsp. orange zest, 2 organic eggs, ½ tsp. cinnamon, ¼ tsp. nutmeg, ¼ cup raisins, ¼ cup currants

Ingredients for glaze: 4 packets of organic stevia, 1 cup of arrowroot or potato starch, 1 Tbls water or almond milk

Directions:   Preheat oven to 350 degrees F.  In a large bowl combine all the ingredients and mix well.  Using a small ice cream scoop, spoon out approximately 14 portions onto a baking sheet lined with parchment paper.  Bake until golden brown on the top (15-25 minutes).  Remove and place on a rack to cool. In a bowl combine the glaze ingredients.  Drizzle glaze over the top of each bun.

Traditional Hot Cross Buns with Whole Wheat Pastry Flour

Ingredients: ½ cup dried currants (or raisins), 5 ¼ cups whole wheat or whole grain pastry flour (divided), 2 large eggs, ¼ cup butter, 1 package of quick rise yeast, 1 cup of almond milk, ¼ cup raw honey, 2 tsp orange zest (or lemon), ½ tsp cinnamon, ¼ tsp nutmeg, 1 tsp sea salt, ¼ cup fresh squeezed orange juice

Glaze Ingredients: 1 cup powdered sugar, 1 Tbsp almond milk, 1 tsp fresh orange juice

Egg Wash: 1 egg whisked with 1 Tbsp water

Directions:  Add yeast packet to ¼ cup of warm water 5-10 minutes.  Combine 5 cups flour with all dry ingredients. Add the currants and orange zest.  Using a mixer with a dough hook, add the dry ingredients and the yeast, and mix until combined.  In another bowl, add all the wet ingredients and whisk together.  Slowly add this to the mixer.  Place the formed dough on a floured surface and knead for about 1-3 minutes or until dough is elastic and sticky.  Slowly add in the remainder of the flour (1 Tbsp at a time) a little at a time until the dough is no longer sticky.  Place dough in a very lightly greased (dab some olive oil onto a paper towel and wipe the inside of the bowl) bowl then cover with saran wrap or a damp clean dishtowel.  Let dough rest and rise to about double its size (about 1 hour).  Punch dough down, cover again, then let it rest for 5 minutes.  Divide the dough into 24 pieces, form each into a ball, and place each in a muffin pan cup (lightly grease the muffin tins or use muffin tin papers). Cover the muffin tins and let dough rise again for about 1 hour or when dough has doubled in size.  Preheat the oven to 350 degrees.  Gently brush the tops of the dough with the egg wash and bake until golden brown (about 20-25 minutes).  Remove and let cool before decorating with glaze in a cross pattern (see sugar free glaze recipe in the gluten free hot cross bun section above).

Holidays like Easter and Passover symbolize a time for rebirth and reflection with families coming together in celebration.  Cancer is a topic I will be continuing to visit throughout the year.  This will be the second Easter Sunday without my Mom.  She passed away a year ago after bravely fighting multiple myeloma for 7 long years.  I am passionate about keeping our immune systems healthy and sharing ways that may help someone ward off the horrible side effects during radiation and chemotherapy treatments.  Let us rededicate ourselves in an effort to prevent cancer and to live a healthy, happy long life.

Dear readers, warm greetings to you.  April is National Cancer Control Month.  The health focus is to help educate and encourage us to reshape our future health, encourage healthy living, and invest in your own health and wellbeing by integrating a few healthy changes we can try today.

Ways To Reduce Risk

There are a few simple steps we can implement today to promote cancer prevention.  A balanced integration of lifestyle (primary food) changes and healthy whole foods (secondary food) choices can support all our health and wellness goals.

 Top 5 Caner Control Tips:

  • Eat Healthy – foods high in antioxidants, vitamins, minerals, healthy fats
  • Reduce Unhealthy – foods high in sugar, chemicals, antibiotics, artificial ingredients
  • Stay Active – exercise or staying mobile can help maintain your weight which in turn increases your immune system and decreases your risk for cancer
  • Eliminate Smoking or Second Hand Smoke – these chemicals create free radicals (damaged cells) and weaken the immune system
  • Take Care – visit your medical professionals, be self aware of any changes in your body or how you feel, get screenings, use sun screen

You can make great chemical free colored Easter eggs with items you already have in your kitchen pantry, refrigerator, or freezer.

Hard Boiling Eggs:

Bring eggs to room temperature (this reduces cracking during boiling).  Place eggs in a saucepan, cover them with cold water, and then bring the water to a rapid boil.  Turn off the fire, cover the pan with the lid, and then let eggs sit for 10 minutes.  Put the eggs in a bowl of cold water to cool them down.  When the eggs are cool, remove them, and wipe them dry.  You can place them into your dye liquid or back into the refrigerator to dye at another time.

Create pictures and designs on the egg prior to coloring by using wax pencil, crayons, and elastic bands.  You can cook and dye the eggs at the same time or make them hard-boiled first.

Bring ingredients to a boil, reduce the heat, then simmer for at least 15 minutes or until you get the color you desire.  Strain liquid into a bowl, add 3 teaspoons of white vinegar per cup of liquid (vinegar helps dye stain the eggs) or 3 teaspoons of salt if you are using fruit for color, then place hard boiled eggs in making sure there is enough liquid to cover the egg.  The longer you let the egg sit, the deeper the color.  If you want the eggs to soak overnight, be sure to put the bowl into the refrigerator.  Eggs will have a matt finish to them. Rub a little mineral or coconut oil on them after they dry to create a glossy look.

  • Yellow/Gold – two cups water, 2 tablespoon turmeric – you can also use saffron (2 Tbls), cumin (2 Tbls), orange peels (6), lemon peels (6), carrots (6), chamomile tea (4 bags), green tea (4 bags), celery seeds (2 Tbls), or cumin seeds (2 Tbls)
  • Orange – four cups water, two cups yellow onion peels – you can also use two cups of water, 2 tablespoon paprika, or carrots (6)
  • Green/blue – 2 cups water, 2 Tbls liquid chlorophyll or spirulina
  • Blue – two cups water, 1 cup blueberries, red cabbage leaves, grape juice (4 cups)
  • Dark Red – two cups water, 1 cup raspberries, pomegranates, red onion peels (6 cups), red wine (4 cups)

  • Pink – two cups water, two cups chopped or grated beets, cranberries, raspberries, or red grape juice (4 cups)
  • Purple – two cups water, 4 cups red wine or grape juice
  • Lavender – two cups water, 1 cup grape juice or red zinger tea (4 bags)
  • Pale Green – two cups water, 4 cups green apple peel
  • Green – two cups water, 6 cups spinach leaves or 2 Tbls liquid chlorophyll
  • Brown/Tan – two cups strong coffee or black tea
  • Brown/Orange – two cups water, 1 tablespoon chili powder

It’s healthy to relax, renew, and balance especially when stress hits us on a daily basis.

Stress affects our mind, body, and spirit. It can affect your mental clarity, give you migraines, acne, and weaken the digestive and immune system. Scheduling in time to decompress should be a necessary part of your day.

Make over your comfort foods when you’re stressed out: Foods to relieve stress

  • Fruit: banana, avocado – high in potassium to keep blood pressure low
  • Tea: green, ginger, or chamomile tea to promote sleep and calm the nerves
  • Swiss chard leafy greens – with magnesium to balance the body’s stress hormone cortisol
  • Fatty Fish for Omega-3s – to manage stress levels and adrenaline
  • Whole wheat snacks (pretzels or oatmeal) – offer an energy boost to keep you feeling full to avoid stress eating – triggers the release of serotonin “feel good” chemical
  • Carrots – munching on something naturally sweet to reduce stress cravings – crunching on something crisp like apples or celery to reduce eating anxiety
  • Almonds and other nuts – can boost your immune system with vitamins and zinc to help with anxiety and depression
  • Dark Chocolate – may lower stress hormones, releases serotonin, and lowers blood pressure
  • Asparagus – high folate to keep you calm
  • Berries – high in antioxidants to combat oxidative stress and the production of free radicals

Dear readers, April is time for warmer weather, melting of snow, and the anticipation of spring showers to usher in the flowers of May. The beginning of spring marks the season of renewal, rejuvenation, rebirth, and the increased daylight. As we spring forth into the month of April, we will celebrate events and food such as National Stress Awareness Month, Cancer Prevention Month, April Fool’s Day, Easter, Passover, and Earth Day.

April 1st is April Fool’s Day. Although it is not an official holiday, it is recognized and celebrated around the world as a practical joke day; a day of light heartedness. Not everyone likes a prankster, but consider the old saying “laughter is the best medicine”. Your health and wellness can go hand in hand with the amount of joy and laughter you let into your life. Laughter can be the best medicine for mind, body, and spirit.

Laughter can trigger healthy physical changes in the body. It can strengthen your immune system, boost your energy, diminish pain, and protect you from the damaging effects of stress.

Laughter is a powerful antidote to stress, pain, and conflict.

Humor can bring your mind, body, and spirit back into balance and reconnect you to lighter, happier thoughts.

  • Laughter relaxes the whole body, relieves physical tension and stress, leaving your muscles relaxed
  • Laughter boosts the immune system, decreases stress hormones, increases immune cells and antibodies to fight infection
  • Laughter triggers the release the body’s feel-good chemicals called endorphins to promote a sense of well-being and temporarily relieve pain by relaxing muscle tension
  • Laughter protects the heart, improves blood flow, which helps protect against other cardiovascular problems.

Dear readers, as March has now ushered in spring, let us all continue to be mindful of our health and wellness goals.  Whether we are dining out or eating at home, mindful over mindless food choices do matter in the long term when it comes to preventing poor health.  When we pay attention to our primary (lifestyle: family, friends, career, spirituality, community, hobbies, finances, etc.) and secondary foods (the food on our plates) we will be able to function in life and love more effectively.

Healthy Mindful Choices Dinning Out Tips:

  • ·      Quality not quantity (i.e. good fats, organic, antibiotic free, whole grain)
  • ·      Variety is the spice of life (eat the rainbow)
  • ·      Balance is key (try a little food combining like vegetables and greens served with animal or plant protein; whole grains like brown rice or pasta served with vegetables or plant protein)
  • ·      Cooking methods (roast, broil, grill, stew, steam, braise)
  • ·      Sweets (fruits, dried fruit, gluten free)
  • ·      Beverages (all natural, water, decaf)
  • ·      Slow it down (chew food thoroughly, eat slowly to allow proper digestion, be sure to taste it)
  • ·      Grateful (be thankful for the food and the people you share it with)
  • ·      Feel the fullness (remember it take 15-20 minutes for your stomach and brain to register it’s satisfied)
  • ·      Portion size (size of a dessert or salad plate)
  • ·      Be prepared (don’t skip meals, bring healthy snacks to avoid the vending machine)

If the weather is still cold our bodies will still be craving hot highly dense fatty foods in its effort to stay warm.  Order soups and stews with lots of leafy greens or salads with animal or plant protein.

For those of us who seem to live and eat in their car, it is not always easy to find a quick, affordable, healthy place to eat. Variety is key when it comes to selecting a place with healthy choices for adults and children.

Panera Bread started back in 1981. The Howley Bread Group is a franchise of Panera Bread managing 28 bakery-cafes across the regions of Greater Hartford, Connecticut, Eastern Connecticut, Rhode Island, and Southeastern Massachusetts.

In 2004, Panera was one of the first national restaurants to start serving antibiotic free poultry. In January 2014, Panera marked its 10th year serving over 20 items with antibiotic free poultry and have now expanded to other proteins such as ham and turkey.

Panera offers healthy salads, hearty soups, low fat smoothies, and whole grain bread and bagel choices. They also offer Asian, Italian, Mediterranean, and Mexican choices. They offer ½ size portions of soup, salad, and sandwiches. You can choose an apple or whole grain side instead of the bag of chips.

Panera didn’t forget the kids! They have squeezable organic yogurt, smoothies, natural peanut butter and jelly or grilled organic cheese sandwiches.

You can check out their menu and bakery items online and they even have a nutrition calculator.

There are over 1000 locations nationwide with small branches popping up in certain malls.

Dear readers, most of the States this year had a very cold start with a few nice sunny days giving us a glimpse of springtime weather to come.  March brought with it this past week the long-awaited joyful anticipation of spring equinox, the first day of spring on March 20th.  During these long winter months, our body, mind, and spirit have naturally slowed down to adjust to less sunlight and colder temperatures.  As our lymphatic system slowed down, studies have shown that our bodies can retain and build up “winter toxins”.   If we are eating foods high in chemicals, artificial ingredients, and highly processed, our body can to store 100’s of chemicals and toxins.  This affects our overall health and well-being contributing to poor health conditions such as:

  • ·      Fatigue
  • ·      Digestion problems
  • ·      Immune system problems
  • ·      Premature aging
  • ·      Stress and anxiety
  • ·      Clutter, unorganized
  • ·      Weight gain
  • ·      Lack of sleep
  • ·      Hormone imbalance

A great way to jump-start our mind, body, and spirit is to “spring clean” with every season change.  Start by getting rid of clutter (office, kitchen, basement, etc.), creating a daily check list (to-do-list), keeping a running grocery list, and going through the entire kitchen to eliminate highly processed foods.  This type of whole-istic detox will renew, rejuvenate, and energize!  Here are a few ideas to get things moving again:

  • ·      Spring clean kitchen by hanging up a weekly or monthly calendar for scheduled events and planning cooking and shopping; make room on your counter or under your counter for the blender,  juicer,  food processor, toaster oven, or crock-pot (slow cooker)
  • ·      Spring clean pantry of all highly processed foods leaving room for healthy essentials and snacks like dried fruit, nuts, seeds, olive oil, spices, organic green tea, water, dried beans, and whole grains
  • ·      Spring clean refrigerator of all highly processed foods, stocking up on fresh whole fruit, vegetables, and chemical free meats
  • ·      Spring clean freezer of all highly processed foods and stocking up on meals, snacks, and side dishes you can reheat and serve on a busy night
  • ·      Spring clean your house with challenging the family to fill a box with items they can donate to charity or just reorganizing each room to de-clutter and create more usable space
  • ·      Spring clean your office by reorganizing and ridding yourself of clutter
  • ·      Spring clean your body with a green juice every morning or with a simple warm water and lemon juice before your coffee or tea
  • ·      Eat more seasonal fruits and vegetables while supporting your local farmer
  • ·      Keep your body hydrated with more water
  • ·      Get physical with a brisk walk outdoors to energize and to soak up essential vitamin D

Dear readers, March is a month of many celebrations such as St. Patrick’s Day, March Equinox better known as the 1st day of spring, Mardi Gras, National Nutrition Month, and Sleep Awareness Week just to name a few! 

Our lifestyles today continue to add increasing demands to an already busy schedule of family, work, friends, community, exercise, and hobbies.  Juggling all of these makes it challenging to keep our commitments to eat mindfully, stay mobile with your favorite form of physical activity, share some quality time with the family, and getting a proper nights sleep too!

This week we spring into National Nutrition Month why not try to limit all the green dyes and chemicals in the traditional St. Patrick’s Day green beer, green whiskey, or green bagel with green cream cheese.

  • Mock green cocktails, juices, or smoothies using healthy kale, spinach, arugula, avocado, parsley, kiwi, granny smith apples, green grapes, or mint
  • Whole wheat and oat Irish Soda Bread
  • Kale chips

 Why not celebrate you, your family, and St. Patrick’s Day this year by saving time and money with a little Healthy Nutrition in a Hurry.  A great way to “healthy cooking on the run” is to break out and dust off that crock pot (slow cooker) in the back of your kitchen gadget cabinet.  Although most of us are pressed for time, we can still throw together a great “set it and forget it” meal with simple fresh healthy ingredients you don’t have to be home to cook!  Try a healthy version of traditional corned beef and cabbage.  Then turn the leftovers into

  •  Corned beef hash (a breakfast side to eggs)
  • Corned beef and potato omelet for breakfast, lunch, or dinner
  • Create a tasty cabbage and corned beef soup

March is a month to think green: St. Patrick’s Day and the first day of spring.  The food focus is all about eating our leafy green vegetables!

Cabbage

Cabbage is a leafy green winter vegetable.  It is rich in antioxidants, fiber, vitamin C, vitamin E, sulfur, calcium, magnesium, and phosphorus.  Some of its health benefits include:

  • Inflammation
  • Constipation
  • Headache
  • Weight Loss

Corned Beef

Corned beef is generally processed in high salt brine and loaded with nitrates.  Eat in moderation.  You can buy a chemical free low sodium organic corned beef at most Whole Foods Markets or your local organic market. Trim the fat and you have a good source of protein, fiber, and minerals like selenium, zinc, and iron, and B vitamins.

You can buy a trimmed beef brisket and cook with the same spices used to brine and cook the corned beef in.
